**Responsibilities**

Summary

The Pastry Sous Chef reports directly to the VP Food Culinary for USH. This position is responsible for adherence to all dessert, pastry and bread presentation throughout the park venues. This position demands a high level of creativity, as well as the ability to communicate effectively. The Pastry Sous Chef should possess the ability to create and foster a cohesive team while demonstrating organizational, planning, delegation, mentoring and coaching skills.



Essential Functions

• Create and prepare new and exciting desserts to renew our menus and engage the interests of guests in the Theme Park

• Decorate pastries using different icing, toppings, etc. to ensure the presentation be beautiful and exciting

• Check quality of material and condition of equipment and devices used for cooking

• Identify staffing needs and help recruit and train personnel

• Maintain all labor cost associated with production

• Must be able to effectively anticipate ordering needs of future production and coordinate ordering.

• Monitor Dessert/pastry program currently in place for the theme park

• Provides preparation and supervision of baked goods going to parks by performing training, quality control and consistency with monitoring cost of goods and spoilage

• Ensure compliance with all local, state and federal laws regarding food quality, safety, labor, employment, and Union guidelines, as well as Company policies and procedures.

• Purchases and orders food items needed for production. Monitors recipes and coordinates with other departments such as Purchasing and Food Distribution Center

• Supervise hourly staff and provides work direction, performance reviews, and coaching to team, providing re-training as needed

• Completion of administrative responsibilities for the department to include review of team member schedules, daily operational work plans, cleanliness and sanitation checklists

• Mentors and counsels team members and enforce appropriate policies and procedures ensuring compliance of departmental standards.

• Performs other duties as assigned

**Qualifications/Requirements**

• High School diploma or GED required

• Culinary knowledge & formal training required

• 5 years in a supervisory Pastry Chef position required; or equivalent combination of education and experience.

• Must be available to work on weekends, holidays and nights in varying weather conditions.

**Desired Characteristics**

• Must have a high degree of artistic ability in the creation of cakes, pastries and specialty show pieces. Training in specialty areas such as pulled sugar, chocolate work preferred.

• Knowledge of various flours, ice creams and yeast, as well as a knowledge of bread baking and hearth baking

• Must demonstrate good judgment and a strong sense of ethics in deciding how to respond to internal (TMs) and external customers’ (guests) concerns and issues while keeping company business models in mind

• Extensive knowledge of food and food handling process. Required ability to cook in a high volume environment, to cook from scratch and understand advanced techniques and procedures.

• Must have excellent written and verbal skills to effectively communicate with all levels of the organization

• Proficiency in Microsoft Office Applications – Word, Excel, PowerPoint, and Outlook

• Strong customer service, interpersonal and organizational skills

• Able to provide creative solutions to guest situations

• Ability to work in a high paced, repetitive team work environment

• Theme park experience preferred

• Strong interpersonal and analytical skills

• Able to manage effectively under deadlines

• Previous experience with creating and managing budgets.
